Vegetable cutlets are a rich source of nutrients. They contain a variety of vegetables that provide immense nutrition to the body.

Ingredients:

Carrots – 1 medium (cut into medium cubes)

Potato – 2 medium (cut into medium cubes)

Green peas – ½ cup

Cauliflower (gobi) – 1 cup (flowers)

Cilantro leaves – ¼ cup (finely chopped)

Onion – 1 medium (finely chopped)

Breadcrumbs – ¾ cup

Corn flour – 1 teaspoon

Grits (sooji) – ½ cup

Red chili flakes – 1 teaspoon

Fresh lemon juice – 1 teaspoon

Turmeric – ¼ tablespoon

Jeera powder (cumin seed powder) – 1 teaspoon

Dhaniya powder (coriander seed powder) – 1 teaspoon

Ginger and garlic paste – ½ teaspoon

Garam masala – 1 teaspoon

Cooking oil – 3 tablespoons

Salt to taste

Method:

Heat a heavy-bottomed wok on the stove. For 1 tablespoon of oil. Add the onion and fry until browned. Add the ginger-garlic paste and fry well. Transfer all vegetables, add turmeric, chilled flakes, garam masala, cumin seed powder (jeera powder), dhaniya powder, salt and stir well. Spray a little water and close it with a lid. Keep turning in the middle. When the vegetables have softened, turn off the heat. Add lemon juice, breadcrumbs, and cornmeal. Mix everything well. Make small patties and sprinkle with grits (sooji) or roll in grits. Place a nonstick tawa on the stove and brush it with 1 teaspoon of oil. Place these empanadas on it and fry them on both sides with a little oil. Serve with tomato sauce and pudding chutney (mint).
